Spring is here! In my part of the world, I woke up to this
morning, April 17, to three inches of SNOW!
There’s no way I can work in my garden,
yet. I can’t wait for Mother Nature to decide it’s going to be a warm Spring.
Since it’s going to be several cold days ahead, I want to share a warm zucchini soup with you. This receipt is fast and easy to prepare, if you're a veggie lover, you'll love it. 4 cups of Water
3-4 Celery stalks
3 Zucchini
1 Green Pepper
1 Tsp of Italian Seasoning
Head of Cabbage
Onion
5 Beef Bullion
1 Garlic Glove
Slice all the vegetable to your liking (we like our vegetable sliced in chunks), add all ingredients to a large pot and simmer for 20 minutes or until vegetables are tender the way you like them. By the way, we like the soup on the spicy side, so I use a little more Italian seasoning. And, if you really want to be brave, use a large can of V8 Juice instead of tomato juice. Enjoy

I'm in northern Ontario and Spring hasn't arrived here yet either, lots of snow still!
